Licensed Kitchen Information:
1) Make at least 15 gallons of chili.
in a licensed kitchen, NOT in a private home.
2) Heat chili to 165 degrees prior to arrival. Maintain at 140 degrees.

In no case shall any home-canned products including vegetables, meats, poultry, fish or shellfish, or home-made sausage be sold or served. Garden fresh produce is acceptable.

*Is the food prepared on day of event?
*You must wear gloves. All chili and condiments, like chips, must be served by you or with correct serving utensil. Can use individual packets - keep cold items cold. Hint: use bowl sitting in ice.
